Abstract
Veriler iki yönlü varyans analizi (ANOVA) ile değerlendirilmiş, ortalamalar Tukey'in HSD testi kullanılarak %5 önem düzeyinde karşılaştırılmıştır.

ABSTRACT: Strawberry (Fragaria × ananassa Duch.) is a highly perishable fruit characterized by rapid softening, high respiration rate, moisture loss, and susceptibility to microbial spoilage, all of which significantly limit its postharvest shelf life. The use of residue-free preservation technologies has gained increasing attention as an alternative to conventional chemical treatments. Among these technologies, ozone has emerged as a promising postharvest treatment due to its strong antimicrobial properties and rapid decomposition into oxygen without leaving harmful residues. This study aimed to evaluate the effects of gaseous ozone treatments on the postharvest quality and microbial status of strawberry cv. Albion during refrigerated storage. Freshly harvested Albion strawberries were treated with gaseous ozone at concentrations of 0 (control), 0.5, 1, and 2 ppm and stored at 4 °C for 10 days. During storage, physicochemical and physiological quality parameters including firmness, weight loss, respiration rate, color values (L*, a*, and b*), electrolyte leakage, pH, titratable acidity (TA), and oxidation–reduction potential (ORP) were evaluated. In addition, total aerobic mesophilic bacterial count was determined at the end of storage to assess microbial quality. Statistical analysis was performed using two-way analysis of variance (ANOVA), and mean comparisons were conducted using Tukey’s HSD test at p < 0.05. The results showed that ozone treatment had selective and concentration-dependent effects on postharvest quality. Firmness, color parameters (L*, a*, and b*), electrolyte leakage, pH, titratable acidity, and ORP were not significantly affected by ozone treatment (p > 0.05). Weight loss increased significantly with storage duration, but no significant differences were observed among ozone treatments. Respiration rate was significantly influenced by ozone treatment, with the 2-ppm treatment showing significantly lower respiration compared with the control (p < 0.05), indicating reduced metabolic activity during storage. Microbial analysis revealed that the 2-ppm ozone treatment significantly reduced total aerobic mesophilic bacterial counts compared with the control (p < 0.05), whereas 0.5 and 1 ppm treatments did not differ significantly from either group. In conclusion, gaseous ozone treatment at 2 ppm provided the most effective preservation among the tested concentrations by reducing respiration rate and microbial growth without negatively affecting major quality attributes. These findings suggest that 2 ppm gaseous ozone has strong potential as an effective residue-free postharvest technology for extending shelf life and improving microbial safety of Albion strawberries during refrigerated storage.
