Bingöl İlinde Farklı Yetiştirme Sistemlerinde Üretilen Tavuk Yumurtalarının Kalite, Besin Madde İçerikleri ve Ağır Metal İçerikleri Bakımından Karşılaştırılması

Abstract

ÖZET: Bu çalışma Bingöl ilinde farklı yetiştirme sistemlerinde üretilen tavuk yumurtalarının kalite, besin madde içerikleri ve ağır metal içerikleri bakımından karşılaştırılması amacıyla yapılmıştır. Araştırmanın ana materyalini kafes sistemi (ticari), köy ve serbest sistemde üretilen yumurtalar oluşmuştur. Her bir yetiştirme sisteminden tesadüfi olarak seçilen 120'şer adet olmak üzere toplamda 360 adet yumurta kullanılmıştır. Üretim sistemleri arasında yumurta ağırlığı ve kabuk ağırlığı bakımından en yüksek ortalama gezen tavuk grubuna ait yumurtalarda 64,04 g olarak tespit edilmiştir. Gruplara ait ortalama yumurta ağırlıkları arasında önemli (P<0,01) bir farklılık saptanmıştır. Yumurta sarısındaki ham yağ ve kolesterol oranları bakımından yapılan karşılaştırmada, ham yağ oranının ticari yumurta grubunda en yüksek değer olduğu (%32,4), kolesterol oranın 299,7 mg/yumurta ağırlığı olarak görülmüştür. Yumurtaların amino asit içerikleri bakımından yapılan karşılaştırmada, % olarak en yüksek değerlerin ticari kafes yumurtalarına ait olduğu görülmüştür. Doymuş ve doymamış yağ asitleri bakımından gruplar arasında yapılan karşılaştırmada, genel olarak köy tavuğu ve gezen tavuk gruplarının doymuş ve doymamış yağ asitleri oranının ticari gruptan daha yüksek değerlere sahip olduğu belirlenmiştir. Yumurtaların ağır metal içerikleri bakımından yapılan karşılaştırmalarda ise, ticari yumurtaların ağır metal içeriklerinin, gezen ve köy tavuklarına ait yumurtalara oranla daha yüksek olduğu görülmüştür.

ABSTRACT: This study was carried out in order to compare chicken eggs produced in different breeding systems in terms of Quality, Nutrient Content, and Heavy Metal Contents in Bingöl. The main material of the research was the eggs produced in the cage system (commercial), village, and free system. A total of 360 eggs were used, 120 of which were randomly selected from each rearing system. Among the production systems, the highest average in terms of egg weight and shell weight was determined as 64.04 g in eggs belonging to the wandering chicken group. A significant difference (P<0.01) was found between the egg weights of the groups. In the comparison made in terms of egg yolk crude oil and cholesterol ratios, the highest value of the commercial egg group in the yellow crude oil ratio was 32.4%, and the cholesterol ratio was 299.7 mg/egg weight. In the comparison made in terms of amino acid contents, it was seen that the highest values in % belong to commercial cage eggs. In the comparison between the groups in terms of saturated and unsaturated fatty acids, it was observed that the ratio of saturated and unsaturated fatty acids of the village chicken and wandering chicken groups was higher than the commercial group average. In the comparison between the averages of the groups in terms of heavy metal contents, it was observed that the heavy metal contents of commercial eggs were low, and the heavy metal contents of eggs belonging to wandering and village chickens were higher.
