dc.description.abstract | This chapter gives information about foodborne pathogens detection by nucleic acid-based methods. Nucleic acid-based methods depend on the detection of specific DNA or RNA sequences in the target pathogen microorganisms by two fundamental techniques: in vitro amplification and hybridization of nucleic acids (no amplification). This chapter provides an overview of nucleic acid-based methods (nucleic acid hybridization, polymerase chain reaction (PCR), real-time PCR, isothermal amplification methods, etc.) used for the detection of foodborne pathogens and their application in foodstuffs. © 2020 Elsevier Inc.
