Bu çalışma ile Adaklı, Yedisu, Genç, Solhan, Yayladere, Kiğı, Karlıova ve Bingöl Merkez olmak üzere Bingöl’ün ilçelerinden toplanan sekiz adet bal örneğinin glisemik indeks (Gİ) değerlerinin saptanması amaçlanmıştır. Bu amaç doğrultusunda, 2020 yılı hasat döneminde toplanan bal numunelerinin melissopalinolojik, nem, HMF, diastaz, prolin, şeker içeriği ve Gİ değerleri tespit edilmiştir, Melissopalinolojik analizler sonucunda, bal örneklerinde toplam 31 bitki familyası ve 74 adet bitki taksonuna ait polen saptanmış olup, 1 adet bal örneği monofloral Verbascum sp., diğer bal örnekleri multifloral çiçek balı olarak belirlenmiştir. Bal örneklerinin, nem, prolin, diastaz, HMF parametreleri sırası ile (% 13,7– 16,4), (357,3 – 1025,8) mg/kg, (7,5 – 19,2), (4,7 – 21,8) mg/kg arasında değişmektedir. Bal
örneklerinin şeker içeriği yüksek performanslı sıvı kromatografisi (HPLC) ile tespit
edilmiş olup, glikoz, fruktoz, sakkaroz, turanoz, maltoz, erloz, izomaltoz değerleri (%29,3
– 32,9), (%36,8 – 41,2), (%0,00-1,53), (%1.22-2,05), (%2,17 – 3,15), (%0,82-3,58), (%0,45
– 0,85) değer aralığında saptanmıştır. Bal örneklerinde trehaloz, melezitoz ve maltotrioza
rastlanılmamıştır. Bal örneklerinin Gİ değerlerini belirlemek için yaşları 29,10 ± 2,99 yıl,
ağırlıkları 70,76 ± 7,68 kg, boyları 174,70 ± 5,41 cm, beden kütle indeksleri 23,13 ± 1,65
olan 10 erkek ve yaşları 28,80 ± 2,78 yıl, ağırlıkları 59,63 ± 5,35 kg, boyları 164,20 ± 4,63
cm, beden kütle indeksleri 22,11 ± 1,69 olan 10 kadın gönüllü çalışmaya dahil edilmiş olup,
12 saat açlık sonrası kan şekerleri kapiller olarak ölçülmüş, sonrasında referans besin
(glikoz) ve bal örneklerini tüketmişlerdir. Bunu takiben 15, 30, 45, 60, 90 ve 120’ nci
dakikalarda gönüllülerin kapiller kan şekerleri ölçülmüştür. Bu çalışma sonucunda bal
örneklerinin, Gİ değerleri, sırasıyla (41,2 ± 18,0), (46,1 ± 31,1), (51,1 ± 30,5), (54,3 ± 17,7),
(57,3 ± 37,1), (60,9 ± 30,6), (62,4 ± 27,1), (72,3 ± 28,6) olarak bulunmuştur. 8 bal örneğinin
4’ü düşük Gİ, 3’ü orta Gİ ve 1’i yüksek Gİ sınıfına girmektedir. İstatistiksel analizler
sonucunda bal örneklerinin Gİ değerleri ve şeker, nem, prolin, diastaz, HMF değerleri
arasında anlamlı bir korelasyon saptanmamıştır (p>0,05). | en_US |

In this study, it was aimed to determine the glycemic index (GI) values of eight honey
samples collected from the districts of Bingöl, namely Adaklı, Yedisu, Genç, Solhan,
Yayladere, Kiğı, Karlıova and Bingöl Merkez. For this purpose, melissopalynological,
moisture, HMF, diastase, proline, sugar content and GI values of honey samples collected
in the 2020 harvest period were determined. As a result of melissopalynological analyzes,
pollen belonging to a total of 31 plant families and 74 plant taxa were determined in honey
samples, 1 honey sample was determined as monofloral Verbascum sp., other honey
samples were determined as multifloral flower honey. Moisture, proline, diastase, HMF
parameters of honey samples varied between (13.7% - 16.4%), (357.3 - 1025.8) mg/kg, (7.5
- 19.2), (4.7 - 21.8) mg/kg, respectively. Sugar content of honey samples was determined
by high performance liquid chromatography (HPLC), glucose, fructose, sucrose, turanose,
maltose, erlose, isomaltose values were 29.3% - 32.9%, 36.8% - 41.2%, 0.00-1.53%, 1.22-
2.05%, It was determined in the value range of 2.17 - 3.15%, 0.82-3.58%, 0.45 - 0.85%.
Trehalose, hybritosis and maltotriose were not found in honey samples. To determine the
GI values of honey samples, 10 men aged 29.10 ± 2.99 years, weight 70.76 ± 7.68 kg, height
174.70 ± 5.41 cm, body mass indexes of 23.13 ± 1.65 years, aged 28.80 ± 2.78 years, weight
59.63 ± 5.35 kg, Ten women with a height of 164.20 ± 4.63 cm and a body mass index of
22.11 ± 1.69 were included in the study. Their blood glucose was measured as capillaries
after 12 hours of fasting, and then they consumed reference food (glucose) and honey
samples. Following this, capillary blood glucose of the volunteers was measured at 15, 30,
45, 60, 90 and 120 minutes. As a result of this study, GI values of honey samples were
found to be 41.2 ± 18.0, 46.1 ± 31.1, 51.1 ± 30.5, 54.3 ± 17.7, 57.3 ± 37.1, 60.9 ± 30.6, 62.4 ±
27.1, 72.3 ± 28.6, respectively. Of the 8 honey samples, 4 are in the low GI, 3 in the medium
GI and 1 in the high GI class. As a result of statistical analysis, no significant correlation
was found between GI values and sugar, moisture, proline, diastase and HMF values of
honey samples (p>0.05). | en_US |
