Some physicochemical properties of honey produced Iğdır and region in Turkey
Abstract
Honey is important food source for human. Turkey is one of most suitable country for honey production. Turkey is second honey producer after China in World and is the first order at the honey production in Europe.
In this research, some physicochemical properties of honey produced in Iğdır and region (Kağızman, Tuzluca, Aralık) were investigated. In research 30 filtering flower honey were used.Brix, moisture content, acidity, hydroxymethylfurfural, glucose and fructose analyzes were performed in filtering flower honey filtration.
According to results of physicochemical analysis mean values were found as the following; Brix 83.30 % ± 0.97, moisture content 15.06 % ± 0.75, acidity 22.64 meq/kg ± 4.16, pH 4.33 ± 0.25, conductivity 0.17 mS/cm ± 0.15, hydroxymethylfurfural 39.85 mg/kg ± 30.41, fructose 38.62 % ± 2.36, glucose 32.46 % ± 2.24, the ratio of fructose / glucose 1.20 ± 0.10 and the amount of glucose + fructose 71.09 % ± 3.66. This mean results showed that filtering flower honey Produced Iğdır and region met for honey notification criteria of Turkish food codex (2012).
