dc.description.abstractÖZET: Arı poleni, içeriğinde bazı biyoaktif primer ve sekonder bileşenler bulunması dolayısıyla gıda ve sağlık alanında kullanılabilme potansiyeli yüksek doğal bir arıcılık ürünüdür. Arı poleni, elde edildiği bölge ve botanik çeşitliliğine göre farklı özellikler göstermektedir. Bu çalışmada, Bingöl Merkez’den aralarında belirli bir mesafe bulunan arılıklardan toplanan 5 arı poleninin; I) mikroskobik analizleri gerçekleştirildi, II) farklı çözücü ve konsantrasyonları kullanılarak, ultrasonik destekli ekstraksiyon yöntemiyle ekstrakte edildi, III) elde edilen ekstrakların, verimliliği, IV) toplam fenolik asit ve flavonoid miktarları, V) ve antioksidan kapasite değerleri hesaplandı. Elde edilen veriler ışığında; I) her bir arı poleni örneğinde farklı oranlarda bulunmak üzere Asteraceae, Fabaceae, Rosaceae familyaları ve Plantago lanceolata, Trifolium sp., Salix sp., Ranunculus sp., Achillea sp., Hypericum sp., Rumex sp., Sanguisorba sp., Pyrus sp., Juglans regia ve Carex sp. taksonlarının yoğunlukta olduğu, II) Arı polenleri ile kullanılan çözücüler ve çözücü konsantrasyonları arasında ortalama en yüksek miktarda ekstrakt eldesi %25 EtOH ile ekstraksiyonda, en düşük miktarlarda ekstrakt eldesi %100 EtOH ile ekstraksiyonda, III) ortalama en yüksek miktarda fenolik eldesi %50 EtOH ile ekstraksiyonda, en düşük miktarda fenolik asit eldesi dH2O ile ekstraksiyonda, ortalama en yüksek miktarda flavonoid eldesi %100 MeOH ile ekstraksiyonda, en düşük miktarda flavonoid eldesi dH2O ile ekstraksiyonda, IV) ortalama en yüksek DPPH antioksidan kapasite değeri %100 MeOH ile ekstraksiyonda, en düşük DPPH antioksidan kapasite değeri dH2O ile ekstraksiyonda, en yüksek ABTS antioksidan kapasite değeri %50 EtOH ile ekstraksiyonda, en düşük ABTS antioksidan kapasite değeri %100 EtOH ile ekstraksiyonda elde edilmiştir. Sonuç olarak, aynı bölge içerisinde görece farklı uzaklıklarda bulunan arı polenlerinin farklı botanik çeşitliğe sahip olduğu tespit edilmiş ve bu çeşitlilik fenolik asit ve flavonoid miktarı ile antioksidan kapasite değerlerini etkilediğini göstermiştir.en_US
dc.description.abstractABSTRACT: Bee pollen is a natural beekeeping product with a high potential to be used in the field of food and health, as it contains some bioactive primary and secondary components. Bee pollen shows different characteristics according to the region where it is obtained and its botanical diversity. In this study, 5 bee pollen obtained from apiaries with a certain distance between them in the Central District of Bingöl; I) microscopic analyzes were carried out, II) was extracted by ultrasonic assisted extraction method using different solvents and concentrations, III) extract efficiency was calculated, IV) total phenolic acid and flavonoid amounts, V) and antioxidant capacity values were calculated. In the light of the data obtained; I) to be present in different proportions in each bee pollen sample; (Asteraceae, Fabaceae, Rosaceae families and Plantago lanceolata, Trifolium sp., Salix sp., Ranunculus sp., Achillea sp., Hypericum sp., Rumex sp., Sanguisorba sp., Pyrus sp., Juglans regia and Carex sp.) taxa are concentrated, II) Among the solvent and solvent concentrations used with bee pollen, the average highest amount of extract is obtained in the extraction with 25% EtOH, the lowest amount of extract is obtained in the extraction with 100% EtOH, III) the highest average amount of phenolic acid is obtained in extraction with 50% EtOH, the lowest amount of phenolic is obtained in extraction with dH2O, the average highest amount of flavonoid is obtained in extraction with 100% MeOH, the lowest amount of flavonoid is in extraction with dH2O, IV) The average highest DPPH antioxidant capacity value was obtained in extraction with 100% MeOH, the lowest DPPH antioxidant capacity value was obtained in extraction with dH2O, the highest ABTS antioxidant capacity value was obtained in extraction with 50% EtOH, and the lowest ABTS antioxidant capacity value was obtained in extraction with 100% EtOH. As a result, it was determined that bee pollen at relatively different distances in the same region had different botanical diversity, and this diversity showed that phenolic acid and flavonoid content and antioxidant capacity values were affected.en_US
